Service design in micro and small businesses: Proposal for applying the approach in the food service sector
With the advancement of technology and economic growth concentrated in a few players in the market and in the world, entrepreneurship has become an increasingly relevant issue regarding the increase of income distribution and development of new jobs. At the beginning of 2019, the small business segment was responsible for the generation of 60.7 thousand job openings, while medium and large companies started the same period with the termination of 25.7 thousand vacancies. At the same time, micro and small companies suffer from a high mortality rate, and 20% of them close down within two years for reasons often related to entrepreneurial management and strategic ability. This paper aims to meet the main needs of micro and small entrepreneurs regarding the strategy and business model, and to propose a methodology based on the absorption of concepts and approaches from design to increase their ability to innovate, aiming to contribute to their competitiveness and sustainability in the market.
