Dry anaerobic digestion in garage-type systems has been presented efficient results in Europe and is suitable for the Brazilian reality, considering the characteristics of Brazilian urban solid waste, as it allows the treatment of waste with a high content of inert material. There is, however, a long way to go for its implementation due to the initial stage of development of this technology in the country and the operational challenges to be overcome. The objective of this work was to experimentally evaluate the influence of operational parameters relevant to this technology on a bench scale, to obtain information that would help the commissioning of a pilot plant in the municipality of Bertioga-SP. An experiment was carried out in a bench-scale garage-type system using food waste previously stored under ambient conditions, using a low inoculum/substrate ratio (2:5 on mass basis and 0.05:1 based on volatile solids). The reactor did not produce biogas during the 43 days of experiment, but it was possible to observe a series of problems, which can be avoided in the pilot reactor. It was observed that the low volatile solids ratio between inoculum and substrate can provide excess organic load at the start-up and the granular nature of the inoculum used can cause clogging, highlighting the importance of using adequate recirculation systems, in addition to granular biomass retention by the waste mass in the tunnel due to the difficulty of percolation. Another experiment analyzed the influence of extraction time for analysis of dissolved solids in food waste. Although a methodological proposal for this extraction was presented, the results indicated that this analysis is not relevant for the characterization of this substrate. A procedure for more accurate pH measurement of food waste was also proposed, employing a dilution of 10 g in 100mL of water and extraction by mechanical agitation at 800 rpm for 10 min, followed by centrifugation at 10,000 rpm at 25°C for 10 min before the measurement. Another experiment evaluated the influence of storage time under ambient conditions and the pre-treatment of forced continuous aeration on the biochemical methane potential (BMP) of food waste. The results demonstrated an increase in the specific methane production of waste stored for 7 days (425 NmL CH4.gVS-1) compared to fresh waste (375 NmL CH4. gVS-1). The adoption of forced and continuous aeration for 4 days produced 456 NmL of CH4. gVS-1 for the leached fraction, 1.22 times greater than the fresh residue, evidencing that the application of aeration as a pre-treatment can be an alternative to optimize methane production. Such results can help the development of this type of technology, solve and prevent problems in pilot and commercial scale reactors
