RESUMO:

Fish is a food of high nutritional quality mainly due to its protein digestibility and the presence of omega-3 polyunsaturated fatty acids and essential elements like selenium, chromium and potassium. Estimate that the current production in the world is around 170,9 million tons and that 17% of the protein consumed is from this food source. Among the species with the greatest production in the world is the skipjack tuna (Katsuwonus pelamis) which, in addition to being widely consumed, has become a possible bioindicator for monitoring global pollution. Within the substances that can bioaccumulate in fish are potentially toxic metals. These elements can present both natural and anthropogenic sources of contamination and their gradual increase in the environment is a concern of several specialists. Mercury, cadmium, lead and arsenic are cumulative toxicants that can be assimilated, stored and concentrated by living organisms through the food chain, eventually causing serious pathological effects. In this work 22 samples muscle and liver tissue the species Katsuwonus pelamis were collected   in July 2018 in the South Atlantic (Brazilian coast). The samples were analyzed by mass spectrometry with inductively coupled plasma (ICP-MS), with the objective of evaluating the concentrations of essential and potentially toxic elements. The concentrations of the elements were measured and the minimum and maximum dry weight values were: Mg (0.95-1.0 g Kg-1), Fe (0.03-0.1 g Kg-1) e Al (19.8-66.7 mg Kg-1), Mn (0.3-0.81 mg Kg-1), V (<LOD-0.019 mg Kg-1), Cr (0.07-0.164 mg Kg-1), Co (0.007-0.035 mg Kg-1), Ni (0.024-0.876 mg Kg-1), Cu (1.67 – 6.51 mg Kg-1),  Zn (13.2-20.8 mg Kg-1), Ga (<LOD-0.012), As (2.3-15.1 mg Kg-1), Se (3.8-5.9 mg Kg-1), Rb (1.69-2.81 mg Kg-1), Sr (0.33-4.29 mg Kg-1),  Ag (<LOD-0.078 mg Kg-1), Cd (0.03-0.62 mg Kg-1), Pb (0.01-0.08 mg Kg-1) , Cs (0,076-0.228 mg Kg-1), Ba (0.038-0.589 mg Kg-1), Tl (<LOD), Hg (0.067-0.127 mg Kg-1) , Bi (<LOD-0.082 mg Kg-1), U (0.001 - 0.002 mg Kg-1) for the muscle. Likewise, the levels measured in the liver were: Mg (1,.5-2.6 g Kg-1), Fe (0.08-0.3 g Kg-1), Al (18,2-69,33 mg Kg-1), Mn (1,4-2,9 mg Kg-1), V (<LOD-0.2 mg Kg-1), Cr (0.07-0.164 mg Kg-1), Co (0.04-0.152 mg Kg-1), Ni (0.043 -1.62 mg Kg-1), Cu (3.67– 29.1 mg Kg-1), Zn (77.4- 464.3 mg Kg-1), As (9.3-20.3 mg Kg-1), Se (25.9-12.5 mg Kg-1), Cd (32.1-4.9 mg Kg-1), Pb (0.,09-0.10 mg Kg-1), Cs (0.076-0.214 mg Kg-1), Ba (0.068-0.796 mg Kg-1), Tl (<LOD- 0.006), Hg (0.050-0.082 mg Kg-1) , Bi (<LOD-0.070 mg Kg-1), U (0.003-0,026 mg Kg-1).. Metal concentrations in muscle and liver were checked for differences between values using the Mann- Whitney test. The result showed that there was a significant difference in Mg, V, Cr, Mn, Fe, Co, Cu, Zn, As, Se, Rb, Sr , Ag, Cd , Ba, Tl , Hg, U, and for Hg and Cr unlike the other elements the accumulation is in the muscle. There is no significant difference in Al, Ni, Ga, Cs, Pb and Bi. From these initial results, it was concluded that the arsenic concentrations are above the tolerable limits in relation to the current legislation, indicating the importance of speciation analyzes not only of this element with other possible ones.
